And Now Another Recipe from

Kitchen:
I’ve really had a taste for
fish recently, especially after all of the steak, lobster,
chocolate... of Valentines. Salmon is my first choice, so healthy
and low in fat. Here are a couple of easy recipes that really bring
out the taste and versatility of this wonderful fish.
Salmon with Bread Crumb, Olive and Sundried
Tomato Crust:
1/4 cup chopped pitted Kalamata olives
1/4 cup chopped cracked Spanish green olives
1/4 cup chopped oil packed sundried tomatoes
3 garlic cloves minced
2 Tbsp. butter
(melted)
1 1/2 tsp. chopped rosemary
1 1/2 tsp. chopped fresh thyme
5 1/2 tsp. golden grain or Dijon mustard
1 cup panko (Japanese bread crumbs) or fresh
Preheat oven to 400 degrees. Mix first 5 ingredients in a bowl
. Mix in 1 1/2 tsp. mustard then bread crumbs. Butter a large baking
sheet. Place 4 Salmon Filets on sheet. Spread 1 tsp. of mustard on
each one. Pack 1/4 cup of mix onto each filet. Bake approximately 12
minutes. Serve with Linguine and Alfredo sauce.
Salmon with Citrus
Horseradish Crust
4-6 6oz. Salmon Filet
8 oz. fresh horseradish grated (or jar will do)
Zest and juice of:
1/2 lemon
1/2 lime
1/2 orange
1 Tbsp. cilantro chopped
1 1/2 tsp. creole or cajun seasoning
salt to taste
Mix all ingredients in a bowl.
Pack onto each Salmon Filet. Bake in preheated 400 degree oven until
Salmon is slightly opaque. Try this one over your favorite flavored
mashed potatoes or sliced on greens.
Salmon and these recipes are so forgiving,
you can’t go wrong!
